You can use the dough hook if you prefer, it is generally not recommended for stiff bread doughs. Ankarsrum Original and Ank Guru – Ashley McChord says stiff doughs = roller bar. I’ve had nothing but success with the Roller Bar. And, many of our Ank bakers who started with the dough hook have migrated to the roller. It just works great!
