If you would prefer to avoid the diastatic malt that is necessary in the current Trailblazer use the Organic Artisan Expresso Bread Flour. It is the equivalent nutrition and performs very well in our loaves. I have switched to this flour because it is Organic, it performs, it is delicious and a great in so many bread recipes.
