          Here is a great video by cereal scientist Andress Ross, of Oregon State University sharing his experience with a maximum tolerance for hydrating flour through the autolyse process.

          Although it is worth the watch, the quick answer is big lift in benefit at 30 minutes, steadily increasing to a maximum benefit at 2 hours and begins to breakdown after that.
