    Here is a great video by cereal scientist Andress Ross, of Oregon State University sharing his experience with a maximum tolerance for hydrating flour through the autolyse process.

    Although it is worth the watch, the quick answer is big lift in benefit at 30 minutes, steadily increasing to a maximum benefit at 2 hours and begins to breakdown after that.

    Julia, it happens to the best of us. Although this is longer than recommended, you do not need to start over. Just keep going!
