The Modern

 

The Modern Formula is the best formula for new bakers. Even experienced bakers find this formula’s predictability and overall loaf performance a winner. The Modern uses instant yeast for leavening which is typically more active than a natural levain starter (sourdough). Short on time, although still a time investment, this formula is the quickest of them all.

This formula uses a 50/50 blend of locally sourced whole-grain and high-extraction bread flours. These flours are available, at a special discount, through our flour fundraiser store.
