FWIW, I was at QFC yesterday and saw they have the 2.5 gallon Rubbermaid container similar to the one shown in favorite products on sale for $9.99. I use this for my bulk rise and it works quite well given its oblong shape which allows for easy stretch and folds.
The proof setting on my oven is 100F which is not hot. I doubt there would be any issue with any good food-safe container. The Carlisle has a high temp limit of 164F.
I’m also needing to get a new bulk fermentation container. I currently use a large stainless steel bowl or a glass bowl. I’m wanting to try the shallow, rectangle plastic container, but I’m concerned about using them in my oven.
I have a proof setting on it, which works well in my cold kitchen. Any health risks with using these types of plastic containers in an oven on proof? I
I’d love to know more about the container you use, can you include a link?

I also use a 12 QT Cambro it is what I have, but I think if you are making a purchase shallower and rectangle works much better! My good friend George dePasquale says so too!
Does anyone have a size of plastic bin they like for their bulk ferment? Â With the new 6 loaf option and my new Ank, I’ve outgrown my largest bowl. Â Would I need a 8 qt, 12qt? bigger?
