Hello all –
I did it – I baked bread and it was GOOD. We tasted one of the two loaves and I was impressed – it is delicious.
I picked up my supplies and flours and baked on the next weekend day I had open. The really nice people at the pick-up spot gave me a few time-saving ideas, like making the porridge when I set the poolish and setting the autolyze in the last portion of the poolish preferment.
I’m trying to figure out how to incorporate baking into working from home (I work 7:30 AM to 4:00 PM). If you have any ideas, please let me know.
