Hillside Grains is an Idaho based family owned wheat grower and mill. Their organic flours are available at Atkinson’s Grocery in Hailey and also at Roots Market in Boise. These flours are a T120 vs. the Whole Grain/T80 combination of the Washington based formula. At this high of an ash content it is an even more nutritious bread.
