Edison is the hometown favorite. This varietal is named after a town just down the road from the Cairnspring Mills, and was bred by retired English Professor Merrill Lewis to thrive in the Skagit Valley’s cool and wet maritime climate.

Description

Cairnspring Mills says their Organic Edison flour is versatile! Just as at home in artisan breads, as it is in quick breads or light and flakey pastries. It has a mild, buttery, and nutty flavor and lighter color because it is milled from a hard white spring wheat. It runs a little lower in protein so it blends with stronger flours like the Glacier Peak or Organic Expresso for more voluminous laminated doughs or with softer flours such as Sequoia for more tender pie crusts.
