Almond Cookies

 My uncle has been making these cookies and sending them to us (along with many others) from North Carolina for as long as I can remember. This year he has decided not to make them anymore so I have decided to dedicate the Operation Cookie Drop to him.

Recipe

Cookie:

2 ¾ cups all purpose flour

1 cup sugar

½ teaspoon salt

½ teaspoon baking soda

2 sticks butter (allowed to soften)

1 egg

1 Tablespoon pure (not imitation) almond extract

Method

Sift first four ingredients and put in a mixer

Add butter to dry ingredients, blend until consistency of oatmeal.

Separately, beat egg , then add extract to egg. Add to dry ingredients and blend until completely mixed.

Divide dough into four roughly equal parts. Roll out each, cut into about 12 slices and put on cookie sheet. Top cookies with almonds.

Cover cookie sheet with plastic wrap and flatten each with circular object – a drinking glass; this makes the almonds adhere to the cookies.

Preheat oven to 325º; bake for 18 minutes or so.

Yields 4 dozen cookies.
