This is what Cairnspring has to say about this popular whole grain flour: Producing dark crusts and crumbs with subtle tones of chocolate and spice, Expresso is our highest protein flour. If you are looking for an Organic Bread Flour, this is it. Popular in tortillas and artisan breads, Expresso blends down well with Edison for wider use in applications requiring less chew. It has more bran and germ than most bread flours, so it will require an additional 5% hydration, or an additional tablespoon per cup of water that your recipe requires.

Our whole grain expresso flour is one of our favorites for sourdough.
