Sequoia is grown by one of our favorite farming couples, Garrett and Jessica Moon of the Moon Family Farm in Horse Heaven Hills, Washington. Using no-till methods that conserve their fields’ fragile soils, they grow wheat on land that gets less than 10″ of rain each year.

Description

Sequoia steps into whatever role you need it and will perform as an all purpose flour. It stands alone as beautiful bread flour or blended with Edison for butter on butter richness in enriched doughs. Add manteca and press out amazing tortillas. Mix up with eggs for chewy noodles standing up to a hearty ragu. It has more bran and germ, so it will require an additional 5% hydration, or an additional tablespoon per cup of water that your recipe requires.
