Description

Our lighter colored sibling to Trailblazer, we use the same Yecora Rojo grain but sift off a bit more bran. Praised by pizzaiolos and pastry chefs for it’s strength and versatility. It’s as happy in pizza and enriched doughs as in laminated doughs such as croissants. Alone, it isn’t a jack of all trades, but as a backbone for your formula it does well with lighter flours to temper it’s chew.
