The Gazelle varietal has a mild flavor for rye. It grows beautifully here in Skagit Valley. For classic, flavorful European-style breads and rolls, blend Gazelle with any of our higher protein flours. Use at 100% for traditional German Vollkornbrot. Add at a low ratio in formulas for added flavor and fermentability.
